This image is a composite of two separate images. The longhorn was taken on a farm near Ennis, Texas and the bluebonnets were beside an old dirt road in the Texas Hill Country.
Most breeds of cattle fall into either beef or dairy. The Texas Longhorn is principally a beef animal and is known for its lean beef, which is lower in fat, cholesterol and calories than most beef. However, Longhorn cheese is often available from Southwestern US grocers. They continue to represent the romance of the American Old West and are often retained for their appearance and alleged intelligence. The breed is claimed to do best in warmer climates.
